  We’ve included our VAT number but you don’t recognize it. I need a complete invoice.

  You can use online VAT validators tools to make sure your VAT Number is correct.
  
  On our side, I’m not sure we can do anything about that since we are not checking those numbers, Stripe does.

  Tha vat number is check using the VIES webservices provided by the EU.
  
  https://www.eeuropa.org/check-a-vat-number-vies-eu-business.html
  
  You can check if your number is registered there.
